  • Black-eyed peas
  • Canola oil
  • Onion
  • Old bay seasoning
  • Jalapeno pepper

Instructions

      Wash and pick through your black-eyed peas. You will want to use dried black-eyed peas for this dish.

      Cover them with water and allow them to sit overnight.

      Drain and rise the peas the next day. Then cut your onion and jalapeno peppers into 1-inch squares.

      Add peas, onions and peppers to a large pot. Cover them all with enough water to bring them to a good boil. Keeping the water over the peas, boil them for about 40 minutes until they are tender, but not falling apart.

      Remove them from the heat and transfer them to a colander. Until you are ready to fry them, you can store them in the refrigerator.

      Pour canola oil into a frying pot. Place about 1 cup of peas into the oil when it is hot enough to fry them. Fry them for about 5 to 7 minutes until the are crispy. Drain the oil from them and toss them in a seasoning such as Old Bay or Tony Cachery's.

Tips & Warnings

  • Wash the peas well and pick out the bad ones.

  • Don't overcook your peas. As soon as they are tender on the inside, get them out of the oil.

  • Use your favorite seasoning.

  • Be careful when frying foods. Oil can be very hot.
