You can quickly set up a safely functioning double-boiler system that is heated by Sterno. Double boilers rely on steam to transfer heat from the Sterno to a secondary vessel. Sterno Canned Heat contains a semisolid jellied alcohol fuel that burns slow to supply a sustained flame. This sustained heat source can be used to create the steam necessary for a double boiler. Things You'll Need

  • Fondue pot with base
  • Running water
  • Metal bowl
  • Spoon
  • Butane candle lighter
  • Oven mitt

Instructions

      Fill a fondue pot with approximately an inch and a half of water from the faucet.

      Set the fondue pot onto its riser base and nestle the metal bowl on top.

      Lift the metal bowl back out and see if it the underside is wet. Pour small amounts of water out of the fondue pot until the level in the pot rests below the base of the nested metal bowl.

      Pry off the lid of a Sterno Canned Heat can with the backside of a spoon and slide it into position under the fondue pot in the base.

      Ignite the gelatinous alcohol fuel with a candle lighter and wait for five minutes.

      Lift the metal bowl with an oven mitt protecting your hand to see if the water has begun to simmer and steam.

      Fill the metal bowl with the item you intend to melt and check on the water level in the fondue pot every 20 minutes. Add water as needed to maintain a steady flow of steam.

Tips & Warnings

  • Some fondue pot manufacturers offer models with double-boiler inserts. Contact your fondue pot maker to see if a custom insert is available.

  • Sterno Canned Heat often burns with a blue or nearly invisible flame. Test to see if the fuel is lit by holding your hand next to the can and not over the flame to feel for heat.
