If you are a working parent and get home and have to put together a meal quickly, it can become very stressful. Of course, you can always order out, but in the time it takes you to order out you can prepare a nice home-cooked meal for your family. You can make oven fried chicken fingers in about 30 minutes. This is a favorite of children because it is a finger food, and nothing can be simpler. Does this Spark an idea?

Things You'll Need

  • 4 boneless, skinless chicken breasts
  • Sharp knife
  • 1/2 cup butter or margarine
  • Small bowl
  • 1 cup seasoned bread crumbs
  • 1/2 cup flour
  • Plate
  • Cooking spray
  • 1 large shallow-sided metal pan

Instructions

      Cut chicken breasts into strips about 1 inch wide. Wash hands. Place butter in the bowl and melt in the microwave to where it is soft; do not let it boil. Pour breadcrumbs and flour onto plate and mix thoroughly.

      Spray cooking pan with spray. Preheat oven to 400 degrees. Dredge the chicken in the butter and then roll in breadcrumb mixture. Place the chicken strips on the pan so they are not touching.

      Put the chicken into the oven and set timer for 6 minutes. Turn the chicken with a fork to expose bottom half. Cook for another 4 minutes.

Tips & Warnings

  • Make sure that the chicken has an internal temperature of 170 degrees, according to Ochef.

  • You can experiment with seasonings, but generally children do not like hot or spicy food.

  • You can also put out dipping sauces for even more variety
