Things You'll Need

  • 2 lb. mixed fruit (apples, oranges, pineapples, kiwi)
  • 2 cups mixed fruit juice
  • 2 cups self-rising flour
  • 1/4 cup mixed nuts (almonds, pecans, walnuts, cashews)
  • 1/2 cup whipped cream
  • Large baking pan

Instructions

      Preheat oven to 250 F.

      Soak mixed fruits in the fruit juice for about two hours.

      Add the flour to the fruit mix and combine thoroughly. Stir in the nuts (optional).

      Grease a large baking pan. Place the flour mix in the pan and bake in the bottom oven for about two hours.

      Remove from the oven and let cool. Place the baked cake in a container or wrap in foil.

      Wait two to three days before cutting. This allows the fruit juice to be absorbed properly into the cake enhancing the taste of the fruit cake.

      Add whipped cream before serving (optional).
