How to Make Spicy Cornish Hen

Things You'll Need
- 7 ancho chilies, dried
- 8 cups boiling water
- 3 tablespoons garlic, minced
- 1/2 teaspoon salt
- 2 tablespoons cilantro, minced
- 2 cups cornmeal
- 2 1/4 tablespoons curry powder
- 2 tablespoons cumin, ground
- Salt and pepper
- 2 Cornish game hens
- 1 cup olive oil

Place the ancho chilies in a large bowl, cover them with the boiling water and soak them for 30 minutes to overnight.

Preheat the oven to 400 F.

Drain the chilies well, then remove and discard the seed and stems. Place your ancho chilies in a blender with the garlic, salt and cilantro. Puree and set aside.

Combine your cornmeal, curry powder, cumin, salt and pepper and spread in on a cookie sheet. Spread the Cornish hens generously and evenly with your chili puree, then coat them in the seasoned cornmeal.

Place your spicy Cornish hens in oven and bake until meat is no longer pink and juices run clear -- about 25 to 30 minutes. Cool to warm temperature and turn off your oven.
