  • 2 lbs potatoes (red skinned recommended)
  • 5 green onions
  • 1 1/3 cup mayonnaise
  • Salt
  • Pepper
  • 2 tbsp vinegar
  • 1 chopped red pepper
  • 1/3 cup parsley, chopped

      First, wash your potatoes. This is important because you will be leaving the skins on.

      Slice your potatoes. It does not matter how you do so, but small slices are generally best. One suggestion is to cut them into cubes.
