Baking a cake without eggs poses a unique challenge because the egg acts as a glue to bind all of the ingredients together. Without this glue your cake can turn into a hard, inedible mess. This recipe is also great for anyone with food allergies and, although it's not vegan, it is vegetarian. Things You'll Need

  • Large mixing bowl
  • 2 cup self-rising flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • Small pieces of nutmeg
  • 1/2 cup sugar
  • 50 g margarine
  • Whisk
  • 50 g raisins
  • 50 g currants
  • 25 g chopped citron
  • 150 ml milk
  • Tinfoil
  • 18 cm baking tin

Instructions

      Mix the flour, baking powder, baking soda and nutmeg in a large bowl. Stir these ingredients until they are evenly combined.

      Stir in the sugar and mix until the ingredients are all evenly combined.

      Grind the margarine into the mix by rubbing and rolling the powder into the margarine. Use the whisk to blend all of these ingredients.

      Stir in the raisins, currants and citron into the mix.

      Add the milk slowly while stirring the mix vigorously. Stir until there is an even texture.

      Cover the bowl with tin foil and place in the refrigerator overnight.

      Grease the tin with a little more margarine and put the mix into the baking tin.

      Preheat the oven to 350 degrees Fahrenheit. After the oven is warmed, cook the batter for two hours.
