How to Make Flowers with Chocolate Leather
"Chocolate leather" is also referred to as chocolate clay, candy clay or chocolate plastic. This edible substance is made by combining melted chocolate with light corn syrup and allowing the chocolate leather to cool and harden. Once hard, the chocolate leather is kneaded until it is pliable and resembles modeling clay. Creating flowers with chocolate leather takes a little practice but you can easily knead the chocolate clay back into a ball and start over if you make any mistakes. Does this Spark an idea?

Chocolate Leather Roses

Roll a piece of chocolate leather between your hands to form a ball 3/4" in diameter.

Apply more pressure to one side of the ball while rolling it to form a cone shape. This cone will become the base of your flower.

Roll several 3/8" balls to create the petals of the flower. You will need approximately four petals to form a small rosebud and eight to nine petals for a full rose. You can always add more petals to give the rose a fuller appearance.

Flatten each 3/8" ball with your thumb to form a petal shape.

Arrange one petal at a time around the tip of the chocolate leather cone. Gently wrap the petal around the cone and press the base of the petal into the cone so that it stays in place.

Continue to attach chocolate leather petals to the cone until you are happy with the appearance of your finished flower.
Chocolate Leather Flowers

Roll chocolate leather onto a clean counter or cutting board with a rolling pin until it is approximately 1/16" thick.

Use flower-shaped cookie cutter to cut flowers out of the rolled chocolate leather.

Place each flower onto a piece of foam or a clean, new sponge.

Press down gently on the center of each flower with a chopstick to give the flower a curved and realistic appearance.

Let the chocolate leather flowers dry completely until they are firm.
