Sorbet is a delicious treat any time of year, especially during warmer months. Try an easy recipe for a spicy new take on raspberry sorbet. Does this Spark an idea?

  • 1 cup granulated sugar
  • 2/3 cup water
  • 2 tablespoons light corn syrup
  • 2 pounds frozen unsweetened raspberries, thawed
  • 1 teaspoon cayenne pepper

Instructions

      In a heavy saucepan over low heat, combine the water, sugar and corn syrup. Cook, stirring, until your sugar is dissolved; it should take three or four minutes. Raise heat to high and bring your mixture to a boil. Remove from heat; set your syrup aside.

      In a food processor or blender, process raspberries with their juices until smooth. Strain the berry puree through a coarse mesh strainer to remove seeds, or put through a food mill. Throw away any solids.

      Mix the berry puree and syrup in the blender with the cayenne pepper and process until smooth. Pour into a bowl and chill thoroughly.

      Transfer your spicy raspberry sorbet to an ice cream maker and follow manufacturer's directions for making sorbet. Pack this into a freezer container and freeze until firm. It should be ready in about three or four hours.
