Assisi embroidery is done by cross stitching the background and leaving the design empty, or voided. The craft originated in Assisi, Italy, in the 13th century, when nuns used the technique to make linen altar clothes embroidered with silk thread. The technique was revived in the early 20th century. Motifs are usually stylized plants or animals.
Select a pattern that is already formatted for Assisi embroidery cross stitch, or format it yourself by setting the background squares for the design and leaving the actual design shapes without cross stitches. Any size counted cross stitch fabric can be used for the technique.

Work the background in a solid color, using two strands of embroidery thread. Work in counted cross stitch, stitching from right to left with a half cross, and then from left to right to complete the crosses all going the same way. Once the background is completed, the Assisi embroidery or design will show.

Emphasize the voiding with another stitch. Work around the edge of the Assisi motif with a backstitch or Holbein stitch and two strands of thread to emphasize the design that is created by the void.
