The date a JPG image file was created is embedded in the header of the file. Digital cameras place information such as the creation date, ISO used, make and model of the camera and the focus distance in this header. This information is called the "metadata." When the image is placed on your computer, the metadata is part of the image's properties and can be viewed in the file manager of the operating system you are using.
