Things You'll Need

  • Blender
  • Spiral slicer
  • Large bowl
  • Casserole pan
  • Dehydrator
  • Cashew Cheese Sauce:
  • 1 3/4 cups cashews (soaked 1 to 2 hours)
  • 2 tbsp. lemon juice
  • 2 tbsp. water
  • 1/2 cup olive oil
  • 1 tsp. sea salt
  • 1/4 cup nutritional yeast
  • 1/4 medium shallot
  • 1/2 tsp. chili powder
  • Pinch cayenne
  • Pinch tumeric
  • 1/2 clove garlic
  • Noodles:
  • 5 organic yellow squash
  • Pinch sea salt
  • Walnuts (finely chopped)
  • Paprika

Instructions

      Combine all cashew cheese sauce ingredients in a blender and mix on high speed until completely smooth.

      Process squash through a spiral slicer creating long noodles. Chop the noodles in half when finished.

      Place noodles in bowl and toss with sea salt. Let noodles sit 45 minutes.

      Pour cheese sauce over noodles and thoroughly mix. Spread mixture into a casserole pan.

      Sprinkle walnuts and paprika on top. Place in dehydrator for two hours.
