Things You'll Need

  • Blender
  • 2 cups raw cashews
  • 2 cups young coconut meat
  • 1 cup filtered water, as needed
  • 1 cup raw agave nectar
  • 1/4 cup coconut butter
  • 1 tbsp. vanilla extract
  • 1 vanilla bean seed (ground)
  • 1/2 tsp. Celtic salt

Instructions

      In a high-speed blender, process all ingredients except cashews and 1/2 cup of water. Blend until smooth and creamy.

      Check for consistency and texture. Add water as needed to ensure that the mixture is processing in the blender.

      Add cashews and blend until creamy and smooth.

      Pour into a large bowl. Cover with plastic and freeze for 1 hour.

Tips & Warnings

  • Variations: For chocolate ice cream, add 1/2 cup of raw cacao powder to mixture during Step 1. For strawberry ice cream, add 1/2 cup of organic strawberries to mixture during Step 1.

  • You can also use an ice cream maker for the recipe.
