      Rub 1/4 cup cooking oil over the surface of the cold grill with paper towels to create a non-stick surface and season your flat top grill before your first use. Heat the grill on medium-high for 10 to 15 minutes to bake the oil into the surface. Reduce heat to low to apply a second layer of oil, and increase the temperature to medium-high for another 15 minutes. Turn the grill off and let it cool before wiping a final thin layer of oil over the surface with dry paper towels.

      When ready to cook, preheat your seasoned grill to medium-high for 10 to 15 minutes, or place a pot on the grill to preheat the metal if you intend to saute or heat liquids.

      Add the food directly to the hot cooking surface since the hot grill prevents sticking. Alternatively, pour 2 tbsp. of oil into your cooking pan for sauteing foods in the pan.
