      Turn the knob or press the button that controls the heat source of your fryer to the desired setting. Many modern, electric commercial fryers automatically adjust temperature downward to maintain heat for frying, but it may be necessary to manually adjust the burners if you are frying different types of foods at different temperatures. The temperature is adjusted downward because the temperature of cooking oil continues to rise as it is heated and if it approaches 400 degrees it becomes dangerous as food could catch fire. The temperature must be constantly brought down to 365-380, the optimum temperature for frying.

      Wait the required number of minutes for the machine to reach the desired temperature, according to the manufacturer's instructions, which indicate the length of time it takes for the fryer to adjust to the new temperature.

      Once the machine has indicated (by beeping or changing the color of a light) that the desired temperature has been reached, add your remaining food to be fried. Do not attempt to add anything to the fryer while the temperature is adjusting.
