  • 6 uncooked mini pastry shells
  • 3 tbsp. softened butter
  • 1/4 c. corn syrup
  • 1/3 tsp. vanilla
  • 1/2 c. brown sugar
  • 1 egg
  • 1/3 c. blackcurrants
  • 1/4 c. golden raisins

Instructions

    • 1

      Preheat your oven to 425 degrees F.

      Combine the brown sugar, corn syrup, butter, egg and vanilla and mix well.

      Add the raisins and blackcurrants to the mixture and stir until the fruit is evenly distributed.

      Divide the mixture evenly into the unbaked mini pastry shells.

      Bake the tarts at 425 F. for 5 minutes, reduce the heat to 325 and bake for another 10 minutes.

      Remove the tarts from the oven and let them rest for about 10 minutes. Serve warm with whipped cream or vanilla ice cream if desired.
