How to Make Banana Bunuelos (Spanish Banana Fritters)

Bunuelos are a Spanish pastry that can be anything from salty to sweet. You can make potato or fruit bunuelos, be served as desserts or afternoon snacks. You will find many variations of bunuelos in many Spanish-speaking countries. Does this Spark an idea?

  • 1 cup all-purpose flour
  • 1 1/2 ripe bananas
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • 1 or 2 cups cooking oil
  • 2 eggs, yolks and whites separated

      Mix the milk, egg yolks, sugar and vanilla extract in a medium bowl. Beat until they are fully incorporated.

      Add the flour slowly, whisking any lumps away. Keep mixing in the flour until you get a smooth consistency.

      Whisk the egg whites in a separate bowl until you form soft peaks and then fold into the flour mixture slowly, until fully mixed.

      Cut the banana into thin slices and fold them into mixture. Heat a pan and add the oil for frying. Add a spoonful of the mixture into the pan and fry until golden brown on both sides. It takes about one and a half minutes on each side. Place on paper towels on a plate to absorb excess oil, then serve.
