How to Make a Toto

A toto is a type of Jamaican bun or cake that typically is flavored with coconut. These cakes vary in texture, size, color and flavor depending on the individual recipe being used. The cake is similar to a bulla, spice bread or rock bun and it is a common and favorite Jamaican snack.

Things You'll Need

  • 1/4 cup butter
  • 1 cup sugar
  • 3 cups baking flour
  • 3 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1/4 tsp. nutmeg
  • 2 eggs
  • 1 cup evaporated milk
  • 1 tsp. browning
  • 2 cups grated coconut
  • 1/2 tsp. water
  • 2 tbsp. brown sugar
  • Greased shallow pan
  • Greased cookie tray (optional)
  • Make browning by placing 2 tbsp. of brown sugar in a saucepan with a 1/2 tbsp. of water. Heat over a medium flame, stirring constantly until the sugar is burnt. Allow the sugar to cool.

  • Cream sugar, browning and butter together by mixing with a blender until creamy.

  • Add eggs and vanilla and blend.

  • Sift together 3 cups baking flour, 3 tsp. baking powder, 1 tsp. cinnamon, 1 tsp. salt and 1/4 tsp. nutmeg. Add the dry ingredients to your wet ingredients by folding a third of the dry ingredients with a spoon with a third of the 2 cups of coconut, and a third of the 1 cup of evaporated milk. Repeat until all of your ingredients are mixed together.

  • Grease a shallow baking pan or cookie tray. Fill a shallow baking pan or place spoonfuls of dough onto a cookie tray at least 2 inches apart. Bake the shallow baking pan in a 400-degree oven for 30 minutes. Bake the cookie tray in a 400-degree oven from 15 to 20 minutes until the bottom is brown and the dough is baked through.
