How to Store Live Oysters

Oysters belong to the love or loathe category of foods. This shellfish, long thought to hold aphrodisiac properties, are typically slurped raw straight from the shell but are also barbecued, pan-fried or even steamed. Whichever way you choose to eat them, fresh, live oysters require proper handling to be eaten safely. When purchasing live oysters, examine the shells to determine that they are tightly closed, with no gaps in between the two shells.       Wash the oysters with cool water prior to storing. This will remove any debris that may have stuck to the shells.

      Place the oysters, flat side up, into a dry, open container, such as a plastic box. Laying them in this way will allow them to retain their juices.

      Do not cover the container with an airtight lid. Oysters need ventilation in order to breathe. Place a damp cloth on top of the shellfish to prevent them from drying out.

      Refrigerate the oysters. They need to be held at a temperature between 34 and 40 degrees Fahrenheit to stay safe for eating. A standard refrigerator typically maintains those temperatures, however, check your refrigerator's temperature.

      Eat or prepare fresh oysters within two days of getting them home. Eating them within one day will ensure maximum freshness.

Tips & Warnings

  • Do not store oysters in a bath of fresh water or on ice as this will kill them.
