Things You'll Need
- Deep frying pan
- 3 cups peanut oil
- 2 pounds yucca
- Salt and pepper to taste
- Cayenne pepper
Heat peanut oil to 350 degrees. You can use a cooking thermometer to gauge the heat.
Cut yucca into strips 1/3 inch thick and 3-4 inches long. Make sure to remove all peel and bark from the yucca. You can also purchase pre-cut yucca strips.
Add cut yucca to oil and fry until golden. Remove immediately and place on a paper towel covered plate to remove any excess oil. Sprinkle with cayenne, salt and pepper to taste. Yucca fries taste delicious on their own, but they also taste great with black bean dip or even thousand island dressing.
