How to Make Carbonara Sauce With Penne Pasta
Carbonara is a rich and creamy white sauce often made with chicken and sometimes tweaked to include peas, broccoli and other vegetables. You can add vegetables if you like, but the key ingredients for a proper carbonara are eggs, cream, Parmesan and pancetta. If you can't find pancetta or it's not in your budget, just use bacon instead. Serve this sauce over penne, spaghetti, fettuccine or linguini. Does this Spark an idea?
Things You'll Need
- 1/2 pound pancetta, chopped, or 1/2 pound bacon
- 2 teaspoons minced garlic
- Salt and pepper
- 6 egg yolks
- 1 1/2 cups heavy cream
- 3/4 cup grated Parmesan
- 1 pound penne pasta
- 4 tablespoons chopped fresh parsley

Heat a large pan and then add the pancetta or bacon and the garlic and cook until golden brown. Add salt and pepper to taste. Take the pan off the heat and set aside.

Whisk the egg yolks, cream, Parmesan and parsley until well blended. Set aside.

Fill a large pot of water and bring to a boil. Cook the pasta 8 to 10 minutes, according to the package directions. Drain the noodles once they are cooked.

Return the pasta immediately to the pot, add the pancetta or bacon and mix well. Pour in the sauce and mix well. Serve immediately with a salad and bread.

Tips & Warnings
Make sure you add the cream mixture while the pasta is still hot.
Have some extra grated cheese to add to top of pasta.
Serve with a nice salad
Serve with italian bread.
You can also serve with garlic bread.
