How to Make Vegetarian Broccoli Cheese Soup From Scratch

Things You'll Need
- 2 tbsp. butter
- 1 medium onion, chopped
- 1/2 cup celery, chopped
- 3 cups vegetable chicken flavored bouillon
- 1 cup milk
- 1 bulb roasted garlic, chopped
- 3 cups broccoli, steamed and chopped
- 1 cup shredded Monterrey jack cheese
- 1 cup shredded sharp cheddar cheese
- salt
- pepper

Melt the butter in a large saucepan. Add the onion and celery and saute until softened.

Add the bouillon and milk and bring the soup almost to a boil.

Gently stir in the broccoli, roasted garlic and cheese. Make sure the soup is hot enough to melt the cheese.

Once the cheese melts, reduce the heat and simmer the soup to thicken.

Add salt and pepper to taste.

Tips & Warnings
For a thicker soup, add a thickening agent made either from flour mixed into melted butter or cornstarch dissolved in water.
For a thinner soup, add water.
For a smooth textured soup, blend the soup in a blender before serving.
Do not boil the soup or you will curdle the milk.
