  • Cast iron skillet
  • Olive oil spray

      Preheat your oven to its highest setting on broil; 450 to 500 degrees is adequate. Close the oven. Season your steak however you like, using salt and pepper or any type of meat rub.

      Spray a fine amount of olive oil cooking spray over the inside surface of the cast-iron skillet. Make sure the skillet fits in your oven.

      Place the pan on the stove on the highest heat setting. Heat it for 10 minutes while the oven heats up.

      Toss the steak into the pan. It will immediately begin sizzling and steaming. This is known as searing the meat. Cook the steak this way for two minutes on each side for a standard 1/2 inch thick T-bone. Compensate for time if it's thicker.

      Place the hot cast iron skillet containing the seared steak into the oven nearest the broiler coils. Cook for three to four minutes. Turn the steak over and cook for another two to three minutes. Remove the steak from the broiler and let it sit for one minute to allow the juices to settle inside the meat.
