How to Dehydrate Yams
Full of vitamins, potassium and fiber, yams are extremely good for you and have a delicious, semisweet flavor. Yams can be dehydrated in an electric food dehydrator to preserve them for later use. Dried yams also make a great snack. Does this Spark an idea?

- Electric food dehydrator
- Airtight containers

Peel and cut the yams into about 1-inch slices or chunks.

Steam blanch the yams for about 10 minutes until they are heated through to prevent them from becoming discolored. Yams should still be crunchy when they go into the dehydrator. Steam blanching can be done in a steamer, in a basket over boiling water, or in a covered container in the microwave.

Sprinkle the yams with a pinch of salt. This will help bring out the flavor.

Spread the yams in even, single layers on the dehydrator trays. Stack the trays onto the dehydrator base, and affix the lid. Turn on the dehydrator. Consult the owner's manual for specific vegetable drying temperatures and times for your particular model. Yams are usually dried at around 140 degrees F for about 10 hours.

Rotate the trays three or four times while the yams are dehydrating so that all the trays dry at the same rate.

Test a chunk of yam to ensure adequate dehydration before terminating the drying process. The chunk should feel firm and semibrittle.

Package the yams in airtight containers immediately after drying. This will prevent contamination and rehydration from moisture in the air.
