How to Discard Latex Paint
Latex paint is a popular choice for do-it-yourself projects because it dries quickly and is easy to wash. It also has an excellent coverage quality: you can often paint a surface with just one coat. It's best to try and use up leftover latex paint for touch-ups or small jobs. However, if you still end up with more than you can use, there are procedures for disposing of it. Pry the lids of the paint cans open with a screwdriver. Set the cans out of the reach of children and pets. Allow the latex paint to dry up and harden. For quicker hardening, fill the can with an absorbent material such as kitty litter or sawdust.

Replace the lids on the cans after the latex paint has dried completely. Secure the lids into place by hitting the edges with a rubber mallet.

Tips & Warnings
According to Bennette Paints (see References), you should never try to dispose of latex paint when it's still in liquid form. It must be completely dried out first.
