  • 1 cup uncooked orzo pasta
  • 2 tbsp. olive oil
  • 2 cloves garlic
  • 1/4 tsp. crushed red pepper
  • 2 skinless, boneless chicken breast halves, cut into bite-size pieces
  • Salt to taste
  • 1 tbsp. chopped fresh parsley
  • 2 cups fresh spinach leaves
  • Grated Parmesan cheese for topping

      Fill a large pot with slightly salted water and bring it to a boil.

      Add the orzo pasta and cook for 8 to 10 minutes. Once cooked, drain the orzo pasta.

      Begin heating the oil over medium-high heat on a skillet. When oil is hot, cook the garlic and red pepper together. You should cook for about 1 minute, or until the garlic is lightly brown.

      Stir in the chicken and cook for 2 to 5 minutes until chicken is cooked through and lightly browned. As you are cooking, season the chicken with salt.
