How to Make Mexican Cookies

Mexican shortbread cookies are light, slightly spicy, sweet and unique. Kids love them. They are also very good with a cup of hot coffee.

Things You'll Need

  • 3 cinnamon sticks
  • 1 cup water
  • 2 1/2 cups flour
  • 2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 cup shortening
  • 1/2 teaspoon vanilla extract
  • 1/2 cup of sugar
  • 3 tablespoon ground cinnamon

Instructions

      Preheat your oven to 325 degrees F.

      In a small size sauce pan, boil your cinnamon sticks. Once they have boiled for about 5 minutes, remove the cinnamon sticks and put the liquid in the fridge to chill.

      In a medium size mixing bowl, add your flour, baking powder and salt. Set it aside for now.

      In a large mixing bowl, add your shortening, vanilla, sugar and 1/4 cup of the chilled cinnamon water. Beat it until it is fluffy. Add the flour mixture and mix it all up.

      Roll the dough into rectangles 1 inch thick. Put them on a cookie sheet and bake for 10 minutes or until the edges are light brown. Mix up some sugar and cinnamon and sprinkle it over the top. Now enjoy with some coffee, hot tea or leche.
