Like other leafy greens, beet greens add deep flavor and a punch of nutrition to your homemade juice. Experiment with ingredients and create your own recipe that balances the beet greens with fruit and other vegetables. Worried that you don't have a juicer? When it comes to choosing an appliance for making juice, you have several options. There are two basic types of juicers available on the market, including centrifugal juicers, which have a high-speed blade that separates the liquid juice from the pulp. Centrifugal juicers create heat during the juicing process, which minimizes the amount of time you can store the juice. Masticating juicers are slower than centrifugal juicers. They are, however, more efficient at extracting the juice, don’t generate any heat and minimize the introduction of air to the juice as it's made. As a result, juice made in a masticating juicer can be stored in the refrigerator for several days without compromising its nutrients.
Another option is to make juice using a high-powered blender. Unlike juicers, which separate the fiber and pulp from fruits and vegetables, blenders create a smooth yet pulpy juice. Because more of the fruits and vegetables remain in your juice, you can expect stronger flavor from blender-made juice than juice made in a traditional juicer.
Good results start by choosing the freshest beet greens available. Some stores carry the greens separately from the roots, but you can also buy them together. Look for beet greens with dark green leaves with red veins and crisp, upright stalks. Cut the greens approximately 1 1/2 inches above the beet root. Wash the greens under cold running water or in a sink filled with water. Place the greens in a colander or on a clean dish towel to allow the water to drain. Although the greens are best used when they are fresh, you can store washed beet greens in a resealable bag in one of the refrigerator's produce drawers for several days.
Balance the earthy flavor of beet greens by juicing other vegetables and fruits along with them. In addition to the flavor of the greens, Serious Eats recommends including the following ingredient types to create a flavorful, palate-pleasing juice: sweet, tart, high-yield and herbaceous or spicy. Fruits, such as grapes, pineapple, melon, berries or apples, add sweetness. Citrus fruits like orange, lime or lemon provide a tart zing. High-yield ingredients such as melon, cucumbers or celery give a large volume of juice, while ginger or hot peppers add spice and herbs such as cilantro, parsley or mint round out the flavor.
Using ingredients that you enjoy eating together is a surefire way to make a juice that you will enjoy. If you’re trying an ingredient for the first time, pair it with something that you know you like. Whenever possible, balance strongly flavored ingredients such as ginger with high-yield ingredients such as cucumbers to avoid overpowering the juice. Taste the juice as you go so that you can make any necessary adjustments, perhaps adding more fruit if it isn't sweet enough or adding more citrus if it’s too sweet.
To get the most juice out of the beet greens, roll them into several tight bundles. Juice a bundle of beet greens surrounded by pieces of firmer produce such as apples or cucumbers. If your juicer or blender has a slow speed, use it while juicing any leafy greens -- including beet greens.
