Things You'll Need

  • 2 to 3 pounds fresh, whole chicken
  • 1 and 1/2 cups barbecue sauce
  • Large oven pan or large glass baking dish
  • 2 tsp. garlic powder
  • Aluminum foil
  • Tongs

Instructions

      Choose a 2 to 3 pound fresh, whole chicken or the equivalent in your favorite parts. Fresh chicken has blemish-free skin and a plump body. Avoid any chicken that has dark yellow patches of skin.

      Cut up the chicken into serving size pieces. Wash thoroughly to remove any bits of cartilage or missed quills. Factories process chicken on high-speed equipment that is not always thorough.

      Preheat an oven to 350 degrees Fahrenheit. This temperature gives the spices and meat juices times the opportunity to blend.

      Place chicken in a large oven pan or glass baking dish. Sprinkle with garlic powder. Cover tightly with foil.

      Bake for 1 hour. Remove from oven and drain cooking juices.

      Brush barbecue sauce on all sides of the chicken pieces. Use tongs to turn the hot meat.

      Return to oven for 30 minutes. When the cooking time is complete, allow the chicken to rest for 5 minutes before transfering to a serving platter.
