How to Make Fig and Champagne Cocktails

Fig and champagne cocktails are easy party drinks that can be made in abundance for a large group of guests without worrying that the quality of the individual drinks will suffer.   • 1 quart fresh figs, pitted
  • Medium glass mixing bowl
  • Potato masher
  • 1 pint kirsh
  • Plastic wrap
  • Saucepan or measuring cup
  • Block of ice
  • Large punch bowl
  • 2 bottles brut Champagne
  • Wooden spoon or ladle

      Place the figs in a medium glass mixing bowl. Mash the figs with a potato masher and pour the kirsh over the top. Cover the mixing bowl with plastic wrap and refrigerate it for 48 hours.

      Strain the kirsch through a fine-mesh sieve, reserving the liquid in a small saucepan or measuring cup. Discard the fig flesh.

      Place a large block of ice in the middle of a large punch bowl. Pour the kirsch over the ice and add the champagne. Stir with a wooden spoon or ladle to combine the ingredients.

      Let the mixture rest at room temperature for 20 minutes before serving to chill.
