How to Operate a Waefa Slicer
You can use a Waefa slicer to achieve uniform straight and wavy slices from a variety of fruits and vegetables. The Waefa slicer is a rectangular wooden board with an attached planing blade. Commonly called a mandoline, this classic Swiss model features two different interchangable blades on an adjustable mount. Things You'll Need
- Raw fruit or vegetable
- Knife glove or kitchen towel (optional)
- Hot water
- Liquid soap
- Nonabrasive scrubber

Clean your raw fruits and vegetables and place them in the refrigerator to chill for an hour prior to slicing. Cold fruits and vegetables are more crisp and will slice more cleanly with less waste.

Lift and remove the straight blade insert with your fingers if you want to change to the wavy blade. Slide the wavy blade insert into the center and press down to snap it into position.

Twist the wing nuts on the side of the Waefa slicer to raise and lower the blade to achieve your desired thickness.

Cover your hand with a cut-resistant knife glove or folded kitchen towel and grasp the chilled produce firmly. The waefa slicer does not come with a food holder or hand protection and can cause serious injury if used incorrectly.

Hold the Waefa slicer still with your free hand as you slide the produce down the board and to the blade in one fluid motion. Lift the slicer and investigate the thickness of the slice.

Make adjustments to the blade height by turning the wing nuts and continue slicing the raw fruit or vegetable. Be careful not to come in contact with the blade's edge when the remaining piece gets small and thin.

Hand-wash the board and blade insert in hot, soapy water with a nonabrasive scrubber and allow it to air dry on the counter before putting it away.
