  • 2 cups evaporated milk
  • 4 egg yolks
  • 1 1/2 cups water
  • 1 cup granulated sugar, divided
  • 3 tbsp. flour or corn starch
  • 5 egg whites
  • 1 tsp. vanilla
  • 8 oz sweetened flaked coconut
  • 1 unbaked deep dish pie shell

Instructions

      Preheat oven to 350 F. In heavy stock pot add evaporated milk, water, egg yolks, 3/4 cup sugar and flour or corn starch. Bring mixture to a slow boil. Stir mixture with a whisk constantly to prevent sticking on bottom of pot.

      Simmer until the mixture thickens and coats a spoon well. Remove from heat and pour custard into unbaked pie shell.

      In separate bowl, beat egg whites. Slowly add in 1/4 cup of sugar. Add vanilla flavoring. Beat mixture until stiff peaks form. Top custard pie with meringue and sprinkle sweetened flaked coconut over meringue.

      Bake in oven at 350 F until the meringue and coconut are lightly golden brown.
