How to Make Mochi with Strawberry Filling

Mochi is a typical Japanese dessert -- so common you can see some being eaten by the protagonists of the Japanese cartoons. The rice and fruit confection is light, but still satisfies a sweet tooth. This recipe makes for about 20 pieces: one mochi dessert per strawberry. Does this Spark an idea?

  • 2 ½ cups rice flour
  • ½ cup sugar
  • ½ liter water
  • 20 whole strawberries
  • 1 can red bean paste
  • Nonstick cooking spray
  • Cutting board

Instructions

      Clean the strawberries well and cut their tops off. Meanwhile, in a bowl, mix the water and 2 cups of the rice flour until you get a smooth texture.

      Spray a microwaveable bowl with nonstick cooking spray. Pour the batter in, cover it with a plastic wrap. Microwave it for five minutes and let it cool down.

      Sprinkle the remaining 1/2 cup of rice powder on a cutting board. Take the dough and roll it into a big ball, then flatten it. Place one strawberry on the center of the flat dough. Cover the strawberry with it and close it tightly. Leave to cool for about 10 to 15 minutes.
