Instructions

Things You'll Need:

  • 1 tbsp. olive (not virgin) oil
  • 1 tsp. salt
  • 3 eggs

  • 2 1/2 c. all-purpose flour

  • 1 tsp. salt
  • 2 1/2 c. all-purpose flour
  • 3 eggs
  1. Step 1

    Sift the flour into a mound on a countertop or board, or, if it's more comfortable for you, into a large bowl.

  2. Step 2

    Make a well in the center of the flour.

  3. Step 3

    Add eggs, salt, and olive oil to the well.

  4. Step 4

    Mix liquid and flour together with fingers.

  5. Step 5

    Knead pasta dough until it is elastic. Let stand for one hour.

  6. Step 6

    Flour table and rolling pin, and roll out dough to a very thin sheet, flouring surface liberally.

  7. Step 7

    Roll the sheet up into a roll, like a jelly roll.

  8. Step 8

    Cut 1/4-inch to 1/2-inch slices from the roll.

  9. Step 9

    Unroll the strips and hang to dry. Hang on clean broom handle or over a towel on stair rails.

  10. Step 10

    Dry pasta for at least 10 to 15 minutes before using. For best results, dry for two hours.

Tips & Warnings
  • You can use a pasta machine to make the noodles more uniform in shape and simplify the rolling and cutting.

you have a food processor, simply place the ingredients in the processor and mix. Then set
the dough aside for 30 minutes. It's a much easier and neater way to make pasta.
