How to Make Your Own Rice Snacks

Brown rice is a whole grain packed with insoluble fiber. Insoluble fiber may not present a cure-all, but according to the Mayo Clinic, it has been shown to sharply decrease the risk of such cancers as breast cancer, colon cancer, cancer of the uterus, throat, mouth and liver, in those whose diets are packed with insoluble fiber. Creating tasty snacks with brown rice is a good way to lower your risk. Does this Spark an idea?

Things You'll Need

  • 1 cup brown rice
  • 2 pots
  • 1 potato (or sweet potato)
  • Potato masher
  • 3/4 tsp. salt
  • Other flavorings (mustard, mayonnaise, marshmallows, etc.)
  • 2 cookie sheets
  • 2 sheets of wax paper
  • Rolling pin
  • Butter knife

      Measure 1 cup brown rice and drop it into a pot of water. Bring the water to a roiling boil and allow the rice to simmer for about 45 minutes, giving the rice a soft, mushy consistency. At the same time, in a separate pot, boil a potato for about 30 minutes so it is soft. (You can also try using a sweet potato instead of a regular potato.) Once done, put the potato and about half the rice into a bowl. Smash and mash the rice and potato with a potato masher, adding the remaining rice and aiming for a mushy mix.

      Add 3/4 tsp. salt and anything else you would like to dress a cracker in. A dash of mustard and mayonnaise can add to the flavor. Marshmallows are another option.

      Place a layer of wax paper on one cookie sheet and plop down spoonfuls of the mix. Once you've filled the cookie sheet, cover the crackers with another piece of wax paper. Thin out the plopped down mixture with the rolling pin, remove the top layer of wax paper and place the crackers, with the help of a butter knife, on a second greased cookie sheet. Place this second sheet in the oven and bake at 300 degrees Fahrenheit for 30 to 45 minutes. Remove from the oven and allow the crackers to cool.
