How to Freeze Breaded Eggplant

If you have leftover breaded eggplant, it can be frozen and used at a later time. Freezing breaded eggplant slices on a tray can bring variety to your diet because the vegetable is often used as a meat replacement. In addition to staying fresh in your refrigerator for up to two weeks, eggplant can easily be kept for even longer in your freezer, especially if it was peeled and breaded beforehand. Instructions

      Spread out the breaded eggplant onto a cookie sheet. For best results, the slices should have been peeled
      and cut into 1/2 inch slices. Make sure that the eggplant slices are not touching.

      Place the cookie sheet in your freezer for eight hours.

      Remove the frozen breaded eggplant slices from the cookie sheet with a spatula. Place the pieces in freezer bags. Load each bag with the portion that you are likely to use all at once. Label the outside of the bag with the date on which you froze the eggplant slices.

      Lay the bags flat on top of each other in the freezer. When you are ready to use them, remove the eggplant from the freezer and bake them to create a quick and healthy meal, such as an eggplant sandwich with pesto or marinara sauce.

Tips & Warnings

  • For best results, peel the eggplant before breading because the peels become tough when frozen.
