How to Use a Griddle on a Smooth Top Range
Cook a variety of foods at the same time using a griddle on your smooth top range. Smooth top ranges are made from durable glass ceramic composites that conduct electric heat to flat bottom cookware. Griddle pans have a large flat surface that is ideal for breakfast foods like bacon, eggs and pancakes. Some griddles are intended to span two burners to create even more cooking area. Things You'll Need
- Griddle pan (non-stick aluminum or stainless steel)
- 2 tbsp. cooking oil (optional)
- Raw food item
- Grease screen (optional)
- Wooden or non-abrasive spatula
- Smooth top range cleaner or dish detergent
- Non-abrasive scrubber

Place the griddle pan over one or two of the largest burners and turn their heat settings to medium high. Avoid sliding the pan on the smooth surface. Move the pan by lifting it off the surface and gently resetting it.

Add a small amount of vegetable oil to the griddle pan after it has heated for two minutes. Adding oil is not necessary with non-stick griddle pans but it will help foods cook faster and release easier.

Lower the raw foods onto the griddle's surface slowly to avoid splattering the hot oil.

Increase the heat to high once the pan is completely loaded with raw food. Cover the pan with a grease screen to prevent a greasy mess.

Flip the food with a wooden or other non-abrasive spatula and reduce the heat to medium high to complete the cooking.

Remove the pan and allow the smooth top range to cool completely before attempting to clean the surface. Most models have indicator lights to let you know when the surface is hot.

Wash the surface of the range with a cleaning product approved by your range's manufacturer using a non-abrasive scrub brush.

Tips & Warnings
Heavy cast iron griddles are not recommended for use on smooth top ranges. They are heavy and have rough bottoms that may scratch or crack the glass ceramic surface.
