Clean and pare eight to ten large carrots. You have the option of cutting the carrots into strips or just washing them and leaving them whole and untrimmed. Place the carrots on a double thickness of heavy-duty aluminum foil.

Distribute 2 tablespoons of butter on top of the carrots. Add salt and pepper to taste. Wrap the carrots securely in the aluminum foil and close. Place the seasoned carrots in closed foil on a hot barbecue grill.

Barbecue for one hour on the hot grill. Just before serving the carrots, open the foil and sprinkle 1/4 cup of packed brown sugar over them. The heat of the carrots will melt the brown sugar. This recipe makes six servings.
