How to Make a Butterscotch Cocktail

A butterscotch cocktail is a simple, easy-to-make drink that can be made in less than five minutes. A wonderful party drink, butterscotch cocktails are rich in flavor and served ice cold, making them perfect for summer pool parties and outdoor barbecues. You can make butterscotch cocktails ahead of time and keep them in large pitchers (as long as you keep them on plenty of ice or in a very cold refrigerator). This recipe makes two drinks, though it is easily doubled.

Things You'll Need

• 1 cup crushed ice
• 1 cup butter pecan ice cream
• 1 tbsp. smooth peanut butter
• 3 tbsp. butterscotch topping
• ¼ cup half and half
• 3 oz. gold rum
• ¼ tsp. cinnamon

Instructions

1. Combine the crushed ice, butter pecan ice cream and smooth peanut butter in a blender, and blend on high speed for 45 seconds or until the mixture is thick and creamy.

2. Add the butterscotch topping, half and half and gold rum to the blender. Pulse on low speed for 30 seconds to combine.

3. Transfer the drinks to martini or highball glasses. Top each drink with 1/8 tsp. cinnamon and serve immediately.

Tips & Warnings

• To make an alcohol-free butterscotch cocktail, simply replace the gold rum with artificial rum flavoring, or simply omit the rum flavor.
