How to Cook Buffalo Wings in the Oven

Traditional Buffalo wings are a dish consisting of deep fried chicken wings tossed in a combination of melted butter and hot sauce. Not only can traditional fried Buffalo wings be unkind to your waistline, but the deep frying can also be messy. If you want the spicy taste of Buffalo wings without the fat and mess, you can make them in the oven. The chicken skin will still become crispy without submerging them in hot oil.   • 1 stick butter
  • Medium saucepan
  • Large bowl
  • 1 1/2 tsp. salt
  • 1/2 tsp. to 1 tsp. cayenne pepper
  • 2 to 4 tbsp. hot sauce
  • 3 to 4 lbs. chicken wings or drumettes
  • 2 baking sheets
  • Instant-read meat thermometer

      Place one stick of butter into a medium saucepan on your stove top. Set the stove to "low" and heat the butter just until it melts.

      Transfer the melted butter into a large bowl, along with, 1 1/2 tsp. of salt, 1/2 tsp. to 1 tsp. of cayenne pepper and 2 to 4 tbsp. of hot sauce--the pepper and hot sauce amounts depend on how spicy you want the wings. Add 3 to 4 lbs. of chicken wings or drumettes into the bowl with the hot sauce mixture.

      Toss the chicken with the hot sauce mixture until all the wings are evenly coated. Set your oven to 425 degrees Fahrenheit.

      Arrange the coated chicken wings onto two baking sheets, making sure they are in a thin, even layer.
      Place the baking sheets into the oven and bake for about 30 minutes or until the chicken wings are golden brown.

      Insert an instant-read meat thermometer into the thickest area of the meat on a chicken wing and ensure it reads 160 degrees Fahrenheit; if not, add the wings back into the oven for another five minutes or so. Serve the Buffalo wings immediately with blue cheese dressing and celery sticks.

  • For crispier wings, reduce the baking time by five minutes and finish them off in the broiler instead.

  • If you want wetter wings, make an extra batch of the hot sauce and melted butter mixture and brush it onto the cooked wings.
