How to Cut Chicken Wings Into Pieces for Buffalo Wings

Buying prepared and seasoned chicken wings from the deli is quick but expensive. And, while you may get a deal on a five-pound bag of precooked wings, you never know quite what's in the coating on those wings. Make your own Buffalo wings for less cost by cutting up fresh chicken wings into Buffalo-style pieces to use with your own marinade or seasoning rub.

Things You'll Need

• Chef's knife
• Cutting board
• Kitchen towel
• Raw chicken wings
• 2 bowls

Instructions

1. Rinse the chicken wings before you begin and place them in a bowl next to the cutting board. Have an empty bowl nearby to hold the cut-up wings.

2. Place a towel under the cutting board to keep the board from slipping.

3. Sharpen your knife. A dull knife will not only slow down your prep time, but it can be dangerous to work with.

4. Stretch the wing out and feel for the joint in the middle. Cut through this joint to separate the wingette and the drummette. Place the cut wings in the other bowl.

5. Cut off the wing tip and discard or use later for chicken stock.

6. Sanitize the cutting board, knife and any other equipment that came in contact with the raw chicken immediately after use.
