How to Make Bing Cherry Syrup

  • 1 1/4 lb. fresh Bing cherries (4 cups), pitted and stemmed
  • 3/4 cup sugar
  • 1/4 cup water
  • Pinch of salt
  • Heavy medium-sized saucepan
  • Fine-mesh strainer or sieve

Instructions

      Boil all ingredients in an uncovered saucepan for 10 minutes. Stir occasionally.

      Remove mixture from heat.

      Strain cherry mixture by pressing it lightly through a sieve. Discard cherry skins.

      Cool syrup, then cover and chill if using at a later time.
