How to Add Cajun Spice to Chicken

      Place one teaspoon Kosher salt, a half teaspoon of dried thyme leaves, and a fourth teaspoon each of onion powder, dried sage, black and white pepper, and an eighth teaspoon of red cayenne pepper into a small bowl. Mix thoroughly to make your Cajun seasoning, and put aside.

      Pound four pieces of skinless, boneless chicken until it is a half-inch thick. To do this, place a sheet of plastic wrap on your work surface. Place a piece of chicken on top of the plastic wrap and place a second piece of plastic wrap on top. Use a meat pounder or the bottom of a heavy sauce pan to pound the chicken. Repeat this process for each piece of chicken.

      Add three-fourths cup plus two teaspoons of vegetable oil to a glass baking dish, or any other shallow dish. Use a wooden spoon to mix in your Cajun seasoning, two and half teaspoons each of dried lemon pepper seasoning and dried Italian herb blend. Add garlic powder to taste. Mix thoroughly until uniform.

      Place the pounded chicken into the oil-and-spice mixture. Turn the chicken to coat it thoroughly. Cover the baking dish with a piece of plastic wrap and refrigerate the chicken in the Cajun spices for at least 30 minutes.

      Use a basting brush to oil a preheated grill. To do this, dip your basting brush into vegetable oil. Then brush the oil onto the grill. This will help prevent sticking.

      Remove the chicken from the Cajun spice mixture and allow the excess to drip off. Place the chicken on the grill and discard the Cajun spice mixture.

      Allow the chicken to cook on each side for six to eight minutes or until the chicken is done. You will know the chicken is done when you cut it open and the juices run clear.

Tips & Warnings

  • This chicken is good warm or cold. If serving warm, then serve it with rice. If serving cold, then place the chicken on bread and enjoy as a sandwich.
