How to Make Chocolate Marshmallow Rolls

Chocolate marshmallow rolls are an easy treat to make for the kids or for party snacks. In less than an hour, you will have a delicious marshmallow treat that everyone will enjoy. One thing you will need that you might not have in your kitchen is a jelly roll pan--a unique baking sheet for making flat cakes, cookies or roasting vegetables.   • Cake:
  • 1 cup flour
  • 3 tbsp. cocoa
  • 1/2 cup boiling water
  • 1 tsp. vanilla
  • 1 cup sugar
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 3 large eggs
  • Powdered sugar
  • Filling:
  • 1 cup whipping cream
  • 1 1/2 cups mini marshmallows
  • Jelly roll pan (10" x 15")
  • Electric mixer
  • White cotton dishtowel

Instructions

      Preheat the oven to 400 degrees F. Grease the jellyroll pan. Boil 1/2 cup water. Set aside.

      Mix flour, salt, baking powder and cocoa together in a bowl and set aside.

      Use an electric mixer to mix eggs and vanilla together.

      Add the sugar to the egg mixture slowly and continue mixing. After the sugar has been added, continue to mix until the mixture is fluffy and light.

      Slowly add the flour mixture to the egg mixture, continue mixing on low speed until well blended, and add the boiling water and mix.

      Pour the mixture into the jellyroll pan and bake for 15 to 18 minutes.

      Place the white cotton dishtowel out flat on the counter. After the cake is done, roll the cake out onto the dishtowel and sprinkle with powdered sugar to coat. Roll the cake up in the towel and cool on a rack.

      Make the filling as the cake is cooling. Whip the whipping cream with the mixer while adding marshmallows and vanilla to the whipping cream.

      Unroll the cake from the towel. Spread the filling over the cake evenly. Roll up the cake once more and refrigerate for two hours or until it is firm.
