How to Sharpen Sushi Knives

Sharp knives are essential for making sushi, both for slicing the fish and for cutting rolls. Keep your sushi knives sharp by using them only to make sushi, and by cleaning and storing them properly. Wash and dry them right after using, and store them either in a sheath or a knife block. Also, keep knives sharp by sharpening them often. Instructions

  1. Manual Knife Sharpener

    • 1

      Use the magnet to secure the knife at the proper angle.

    • 2

      Hold the knife with light, even pressure.

    • 3

      Pull the knife toward you.

    • 4

      Wipe the knife with a towel.

    • 5

      Repeat four times.

    Using a Steel

    • 6

      Hold the knife blade against the tip of the sharpening steel at about a 15-degree angle.

      Pull the knife down and across the steel.

    • 8

      Repeat on the back of the steel to sharpen the other side of the blade.

    • 9

      Alternate the left and right side of the blade, repeating all three previous steps five times.
