How to Make Italian Lemon Ice With Juice Concentrate

A good Italian ice is made with three ingredients: water, sugar and lemon juice. Lemon concentrate will save you from squeezing fresh lemons, but purchase a product that is a pure juice without additives for the best result. Some concentrates have added sugars and preservatives that will affect how your ice tastes. The strength and texture of your concoction will vary depending on how you adjust the recipe and how much patience you have in tending to your dessert while it freezes. Does this Spark an idea?

Instructions

    • 1

Place all ingredients into the saucepan and heat on low while stirring until the sugar has completely dissolved. If it's not sweet enough, add a little more sugar, a teaspoon at a time, until it has reached the desired flavor.

    • 2

Pour the lemon mixture into the baking pan, and place it into the freezer.

    • 3

Stir the mixture every 20 minutes or so while the ice sets up. The first time you do this you won't notice much of a change, but eventually it will start to freeze. By stirring, you will continue to break up the ice and end up with a crystallized texture that will mimic that of shaved ice.

    • 4

Remove from the freezer when it reaches the consistency you want, and scoop out the ice into individual serving cups.

Tips & Warnings

  • To serve later, allow the lemon ice to completely freeze and then use a blender or a food processor to crush the ice before serving.
