Things You'll Need

  • For the ribs
  • 2 slabs baby back ribs or spareribs
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon pepper
  • 1/2 teaspoon cinnamon
  • 1 cup of Wood Chips For barbecue sauce
  • 2−15 oz. cans tomato sauce
  • 1/2 cup molasses
  • 2 tablespoons dry mustard
  • 1/4 teaspoon hot pepper flakes
  • 1/2 cup red wine vinegar
  • fresh ground pepper
  • 10 cloves garlic
  • 2 tablespoons ground cumin

Instructions

      Gather together:
      For the ribs
      * 2 slabs baby back ribs or spareribs
      * 1/2 teaspoon ground cloves
      * 1/4 teaspoon pepper
      * 1/2 teaspoon cinnamon
      * 1 cup of Wood Chips
      For barbecue sauce
      * 2−15 oz. cans tomato sauce
      * 1/2 cup molasses
      * 1/2 teaspoon cinnamon
      * 2 tablespoons dry mustard
      * 1/4 teaspoon hot pepper flakes
      * 1/2 cup red wine vinegar
      * fresh ground pepper
      * 10 cloves garlic
      * 2 tablespoons ground cumin

      To make the ribs. Preheat your oven to 400F. Rub the cloves, cinnamon, and pepper into both sides of ribs. Place ribs on wire rack in a baking pan. Bake the ribs for 3 hours until tender. Soak the wood chips in water for roughly 30 minutes.

      Soak the wood chips in water for roughly 30 minutes. Place the wood chips directly in the center of the hot coals in the grill. Baste ribs and place on grill above the wood chips. Cover the grill and let cook for 10 minutes. Turn ribs, baste again and cook another 10 minutes or until ribs are browned but still moist. Cover in sauce and serve.

      To make the sauce. Combine all ingredients except the vinegar in medium size saucepan. Simmer will it is covered on low heat for 1 hour,making sure to stirring occasionally. Add the vinegar to taste and simmer for another 15 minutes. Chill at least 24 hours, or until ready to on the ribs.
