How to Make Easy Coconut Cream Pie

  • 2 1/2 cups of milk
  • 2 egg yolks
  • 1 cup of sugar
  • 1/4 cup of heavy cream
  • 4 tablespoons of cornstarch
  • 2 tablespoons of softened butter
  • 2 teaspoons of vanilla
  • 1 1/2 cups of flaked coconut
  • 1 baked pie shell
  • 1 cup of heavy whipping cream
  • 2 tablespoons of powdered sugar
  • 1/2 teaspoon of vanilla

      Whisk the egg yolks, milk and cream together in a medium-size mixing bowl. Mix the cornstarch and sugar in heavy sauce pan. When both have been mixed well, slowly pour in the yolk mixture into the cornstarch mix while mixing. Let it cook over medium heat, stirring occasionally, for five minutes. Keep stirring constantly until the mixture comes to a boil, and let boil roughly eight minutes more.

      Remove from the heat and stir in the butter and vanilla. Pour into the pie shell and smooth the top. Cool pie in the refrigerator.

      Top the pie with whipped cream and sprinkle on the flaked coconut when you are ready to serve the pie. To make the whip cream, mix 1 cup of heavy whipping cream, 2 tablespoons of powdered sugar and 1/2 teaspoon of vanilla and whip until the cream holds stiff.
