How to Make Low-Fat Cake
Cakes are often very rich because they tend to be loaded with sugar, butter, eggs and milk. A number of healthier cakes combine lighter ingredients, thus producing a low-fat and low-sugar dessert. Angel food cake in particular is a light and fluffy cake composed of egg whites, flour, sugar, salt, vanilla and cream of tartar. Things You'll Need
- 1 1/4 cups cake flour
- 1 3/4 cups white sugar
- 1/4 tsp. salt
- 1 1/2 cups egg whites
- 1 tsp. cream of tartar
- 1/2 tsp. vanilla extract
- 1/2 tsp. almond extract

Spin sugar in a food processor until it is super fine, then sift together flour, sugar and salt.

Whisk egg whites, cream of tartar, vanilla extract and almond extract for two minutes, then mix with a hand mixer. Add dry ingredients and mix at medium speed.

Spoon mixture into an ungreased 10-inch tube pan. Place pan in a cold oven, then set the oven to 325 degrees and bake for about one hour or until the cake is golden brown.

Insert a wooden skewer into the cake and remove it. If it comes out clean, the cake is done. Invert the cake, and allow it to cool in the pan. Once cooled, remove from pan.

Use the freshest eggs possible because they separate easily.
