Need a BIG dessert for a holiday celebration? Try this Pumpkin bar recipe baked in a cookie sheet like Texas Sheet Cakes are.   1. Step 1

    Heat oven to 350 degrees. Grease a 15 X 10 X 1 inch cookie sheet.

  2. Step 2

    In a large mixing bowl, beat 4 large eggs until foamy. Add 2 C. sugar, 1 C. Oil, and 2 C canned pumpkin. Beat for 2 minutes at medium speed.

  3. Step 3

    Add 2 C. flour, 2 t. baking powder, 1 t. baking soda, 3/4 t. salt, and 2 t. cinnamon. Beat 1 minute at low speed. Pour into prepared pan.

  4. Step 4

    Bake at 350 degrees for 25 to 30 minutes or until toothpick inserted comes out clean. Cool.

  5. Step 5

    For cream cheese frosting, in a mixing bowl, beat 8 ounces cream cheese, 1 stick softened butter, 1 T. milk, and 1 t. Pure vanilla till smooth. Slowly add 2 C powdered sugar until smooth and creamy. Add a little more milk if too thick, but you don't want a runny frosting. Spread frosting over cooled pumpkin cake. Cut into bars.
